Salmon was a nice change of pace for us! The only alteration I made to the recipe was I left out the sun dried tomatoes. Oh and that I turned it into blackened salmon because I cooked it on HIGH not Medium-High. I guess I need to learn to read! But it was still good. This is one of our favorite recipes! I made it in Waco and we brought it to Boston with us! Even though I love pine nuts, I skipped out on them this time because they are so expensive here. At HEB, I was able to get a small amount in the dispensers. Next time I head to Texas, I’ll have to sneak a bag back in my carry-on!
I loved this dish so much – I had to go Round 2! I still left out the chicken bouillon BUT remembered to grab the basil this time (FYI: In Boston, Basil is found by the tomatoes not with the other herbs)! This time I didn’t plan for the meal and ended up being out of mozzarella and cream cheese. We didn’t notice a difference and it was healthier too! Peanut Butter Sandwich
Garrett was congested and couldn’t taste anything Thursday. I didn’t waste my time and took the day off! Just peanut butter – no jelly. If you need the recipe, ask your mom.

I always have a chocolate craving or more specifically a cookie craving! These cookies were so easy to make & I only dirtied one bowl. As I was linking the recipe just now, Garrett asked if we had the ingredients to make this tonight cause they were soooooo good!
On Saturday, we hopped on a bus to New York to watch the Yankees’ playoff game against the Indians! It was a blast and everywhere we ate was absolutely delicious. We went to my favorite pizza place, Grimaldi’s under the Brooklyn Bridge.
