Weekly Fixins’ #4

First week of cookin’ without the crockpot for me! Here’s what we whipped up:

Spinach Lasagna Roll-Ups & Asparagus 

Lasagna Roll-Ups are so much easier than normal lasagna! It made serving simple; plus, you don’t have to worry about lining the pan perfectly with noodles! I’m sure their sauce is amazing but I used a store-bought sauce instead to quicken the recipe. We paired this with garlic toast and asparagus. To cook the asparagus, I made “a tin foil boat” on a cookie sheet. I put the asparagus inside and poured a mixture of olive oil, 1 drop of Lemon Vitality Essential Oil and salt on top (Bake for 20 mins @ 375). For the ingredients and directions, click “Spinach Lasagna Roll-ups” above to go the recipe’s website.

Steak & Mashed Potatoes

We finally tried this again after fireman fiasco (HERE). This time it turned out a million times better! We picked up these steaks when exploring the Boston Public Market & they were phenomenal.

Nice and easy meal – perfect for Saturday Football!

Don’t forget the salsa! We’ve been hooked on “Hell on the Red” Salsa recently.

Baked Apple Cider Chicken 

I made this to go with green beans and leftover mashed potatoes. It smelled and tasted like thanksgiving! The chicken was juicy and great for a fall evening but it wasn’t our favorite. I don’t think I’ll make it again.


Healthy Eggless, Flourless, Oatmeal-Banana Chocolate Chip Cookies

I shared these earlier, but they were so good I made them again! So far, this has been the treat I’ve made when Garrett is getting his treatment – we’ll see if the tradition continues! The only challenge with these cookies is you have to refrain from eating the bananas before they ripen. This is difficult for our family because we love our peanut butter banana toast!

We treated ourselves a little more than usual this week with eating out! On Wednesday, I went out with the girls from my Speech Path program to Sunset Cantina. We split the Fiesta Nachos – hands down best nachos I’ve ever had! Garrett and I ventured to Back Bay this week to finally buy our winter coats. There we hit up The Salty Pig, Atlantic Fish Co, and Dirty Water Dough Co.
