Weekly Fixins’ #5

It’s been awhile since I’ve posted the recipes I’ve tried from Pinterest. One of Garrett’s and my goals for 2019 is to cook dinner more often. Last semester with the crazy hours we “worked,” dinner was put on the back-burner. We were definitely guilty of having chips and salsa for dinner. This sweatshirt literally describes me last fall.

Garrett started a week earlier than me this year so I got a week home to myself and had plenty of time to cook dinner. Our friend, Kerri, came over each night and here are a few recipes we whipped up together. Just click the bolded name to find recipe!


Chicken and Zucchini Noodle Caprese

We started off the week with chicken and zucchini noodle caprese. We used marianted mozzeralla balls, which we think added quite a bit of flavor. Next time, I would more zucchini noodles to make it more like a pasta dish. Overall, it was delicious and will be added to our recipe repertoire.


One Pan Balsamic Chicken and Veggies

I was pleasantly surprised about how much I enjoyed this meal. It was so flavorful. We did green beans and asparagus and it was scrumptious. I reccommend serving with rice or quinoa to soak up all the balamic marinade. Highly recommended.


Frank’s RedHot Buffalo Chicken Dip

Buffalo Chicken Dip is cooked at least every other week at our house. It is Garrett’s favorite. If you are looking for something to bring to a Super Bowl party, this is it!! It is perfect to serve with Tostitos, celery, and carrot sticks. Oh and I’m anti blue cheese – we just leave that out or replace with cheddar cheese.


Blender Banana Oatmeal Muffins

I just whipped these up today since I was stuck inside {it felt like -17 degrees today…just wanted to reiterate that wasn’t just a dash…it is negative 17 today}. Back to the muffins. They are super easy to make. Blend everything in the blender. Stir in mini chocolate chips. And pour in the muffin pan. They are perfect to grab real quick for breakfast as you’re running out the door. We’re excited to eat these throughout the week
